Doesn’t soup just feel like a big hug from the outside?! It does for me! It’s the ultimate comfort food and gives me all the cozy feels, especially on a cold fall day. With fall right around the corner I am so excited to experiment with soups! They are so nourishing for your body and a great way to get all your veggies in. This tortilla soup is a great alternative to tortillas if you are trying to stay low carb or just want something to warm your insides!
1 tbsp olive oil
1 yellow onion, diced.
1 block of organic extra firm tofu, crumbled.
2 cups veggie broth
I can diced organic tomatoes
1 can black beans, strained and rinsed.
1/2 jalapeno pepper, diced.
1 red bell pepper, diced.
1 tbsp chili powder
1/2 tbsp cumin
1/2 tbsp onion powder
1/2 tbsp garlic granules
1/4 tsp cayenne pepper (optional, for spice)
Sea salt & pepper to taste
vegan cheese (optional)
organic tortilla chips (crumbled)
Heat oil in a soup pot.
Saute onions in the oil until translucent.
Add tofu crumbles and season with salt and pepper.
Dump in all other ingredients.
Stir everything together and bring to a boil.
Cover, turn down to medium low heat and let simmer for 20 minutes.
