Tortilla soup

Doesn’t soup just feel like a big hug from the outside?! It does for me! It’s the ultimate comfort food and gives me all the cozy feels, especially on a cold fall day. With fall right around the corner I am so excited to experiment with soups! They are so nourishing for your body and a great way to get all your veggies in. This tortilla soup is a great alternative to tortillas if you are trying to stay low carb or just want something to warm your insides!


  • 1 tbsp olive oil

  • 1 yellow onion, diced.

  • 1 block of organic extra firm tofu, crumbled.

  • 2 cups veggie broth

  • I can diced organic tomatoes

  • 1 can black beans, strained and rinsed.

  • 1/2 jalapeno pepper, diced.

  • 1 red bell pepper, diced.

  • 1 tbsp chili powder

  • 1/2 tbsp cumin

  • 1/2 tbsp onion powder

  • 1/2 tbsp garlic granules

  • 1/4 tsp cayenne pepper (optional, for spice)

  • Sea salt & pepper to taste


  • Avocado

  • green onion

  • cilantro

  • olives

  • vegan cheese (optional)

  • organic tortilla chips (crumbled)


  1. Heat oil in a soup pot.

  2. Saute onions in the oil until translucent.

  3. Add tofu crumbles and season with salt and pepper.

  4. Dump in all other ingredients.

  5. Stir everything together and bring to a boil.

  6. Cover, turn down to medium low heat and let simmer for 20 minutes.

  7. Enjoy with garnishes and lots of love!
