ROSEMARY CURLY FRIES & ROASTED VEGGIES

Who says curly fries can't be healthy? When they're baked and tossed with healthy oil (yes, olive oil contains healthy fats that are actually good for you! It contains monounsaturated fat called oleic acid which is believed to help reduce inflammation, while also containing a high amount of antioxidants). Living a plant-based life style isn't so bad, you can have all the fries you want!

 

Recipe

rosemary curly fries:

  • 2 medium potatoes, spiralized
  • 1/2 tbsp rosemary
  • 1 tbsp olive oil
  • pinch of sea salt
  • pinch of pepper
  • Hot sauce (optional, for topping)
  • Nutritional yeast (optional, for an added cheesy flavor)

roasted veggies:

  • 1 cup broccoli crowns
  • 1 cup carrots, chopped
  • 1 tbsp garlic, minced
  • 1 tbsp olive oil
  • juice from one lemon
  • 1 tbsp balsamic vinaigrette
  • pinch of sea salt
  • pinch of pepper

Directions

1. Preheat oven to 400 degrees.

2. Toss veggies with olive oil, lemon, garlic, balsamic vinaigrette, sea salt and pepper and lay out evenly on a baking sheet. Bake for 40 minutes.

3. Once veggies are done, toss your spiralized potatoes with olive oil, rosemary, sea salt and pepper and lay out on a baking sheet. Put under the broiler on high and cook until crispy and golden brown (keep an eye out on these because they tend to cook quick, about 5 or so minutes). Top with hot sauce and nutritional yeast for a little kick!

 

Notes: If you don't have a spiralizer for the potatoes, don't worry! You can't still make potato wedges that are just as good, but may take a little longer. You just have to boil the potatoes first until they are soft all the way through (about 25 minutes) and then cut them into wedges. Then put them under the broiler for the same amount of time!
