Pumpkin Chocolate Chunk Cookies

Trick-or-Treat! The only thing better then the crisp cool air and the leaves changing in the fall are these pumpkin cookies! And I only feel slightly bad when I eat the whole batch (hehe) because they are made with the best quality ingredients. Make these for your kids this fall and they will love them!


  • 1 flax egg (1 tbsp flax meal + 3 tbsp water, let sit for 5 minutes)

  • 1/3 cup cashew butter (or any other kind of nut butter)

  • 1/2 cup pumpkin puree

  • 1/2 cup coconut sugar

  • 2 tsp vanilla

  • 2 1/3 cup almond flour

  • 1 tsp baking soda

  • 2 tsp pumpkin pie spice

  • 1/2 cup dark chocolate broken into chunks (I used eating evolved dark chocolate because it is refined sugar free)


  1. Preheat your oven to 350 degrees

  2. Line a baking sheet with parchment paper, or oil it with coconut oil

  3. Combine all ingredients in a mixing bowl until well combined. (leave a few chocolate chunks aside).

  4. Scoop cookie dough onto baking sheet, making about 10-15 cookies

  5. Put a few more of the chocolate chunks on top of the cookies.

  6. Bake for 10 minutes, eat up and try not to eat the whole batch! If you do, no shame, I do it all the time ;)
