Pumpkin Chocolate Chunk Cookies
Trick-or-Treat! The only thing better then the crisp cool air and the leaves changing in the fall are these pumpkin cookies! And I only feel slightly bad when I eat the whole batch (hehe) because they are made with the best quality ingredients. Make these for your kids this fall and they will love them!
1 flax egg (1 tbsp flax meal + 3 tbsp water, let sit for 5 minutes)
1/3 cup cashew butter (or any other kind of nut butter)
1/2 cup pumpkin puree
1/2 cup coconut sugar
2 tsp vanilla
2 1/3 cup almond flour
1 tsp baking soda
2 tsp pumpkin pie spice
1/2 cup dark chocolate broken into chunks (I used eating evolved dark chocolate because it is refined sugar free)
Preheat your oven to 350 degrees
Line a baking sheet with parchment paper, or oil it with coconut oil
Combine all ingredients in a mixing bowl until well combined. (leave a few chocolate chunks aside).
Scoop cookie dough onto baking sheet, making about 10-15 cookies
Put a few more of the chocolate chunks on top of the cookies.
Bake for 10 minutes, eat up and try not to eat the whole batch! If you do, no shame, I do it all the time ;)
