Coconut chia pudding
This is one of my favorite things to have for breakfast when I’m trying to keep the carbs on a lower scale, just opt out the sweetener and you have a fairly low carb, delicious breakfast full of healthy fats, antioxidants, omega-3’s and protein! I love it because you can switch it up every time, play with flavors and toppings. It’s super creamy and will also keep you feeling full through out the morning. Not to mention extremely easy to make, you could put it in a mason jar and grab it on your way out the door!
3/4 cup unsweetened almond milk
1/4 cup organic coconut cream
1/4 cup chia seeds
2 tbsp hemp seeds
1 tsp vanilla extract
1/2 tsp cinnamon
1 tbsp maple syrup (optional)
Raw honey (if desired)
Combine all ingredients in a bowl, let sit in the refrigerator for at least one hour.
Top with toppings and enjoy with gratitude! :)
