Chocolate peppermint maca raw bars

These chocolate peppermint maca raw bars are the perfect treat on a hot day! With spring right around the corner it’s time to think of some refreshing treats that are both delicious and nutritious. These are made with @navitasorganics maca powder and @navitasorganics hemp seeds which both will give you natural energy through out your day. Hemp seeds are also a great source of omega-3s and omega-6s which are both essential for optimal health. They are like eating an ice cream sandwich only these are packed with nutrients, your kids will love em!

Recipe

CRUST:

  • 2 cups mixed nuts
  • 1/2 cup ground flaxseed
  • 7 dates
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 1/4 cup Navita’s Organics hemp seeds
  • 1/3 cup nut milk

filling:

  • 2 frozen bananas
  • 1/3 cup tahini
  • 1/2 cup almond milk
  • 1 1/2 tbsp Navita’s Organics maca powder
  • 1/4 tsp spirulina
  • Dash of peppermint extract

chocolate coating:

  • 4 tbsp coconut oil
  • 3 tbsp coconut sugar
  • 2 1/2-3 tbsp Navita’s Organics cacao powder
  • Pinch sea salt

Directions

  1. First line a bread pan with parchment paper.

  2. Next process the nuts in a high speed blender until finely chopped. Then add the rest of your crust ingredients. Blend until it turns to a fine crumble.

  3. Transfer to your bread pan and even out using your hands. Use the back of a spoon to smooth it all out. Place in the freezer.

  4. Next blend all of your ingredients for the filling in a high speed blender. The key is to be patient and stop to mix it up using a spatula several times. It may seem like it needs more liquid, but it will eventually break down into a smooth and creamy consistency like ice cream.

  5. Next add the filling on top of the crust and place back into the freezer.

  6. For the chocolate later: melt the coconut oil in the microwave for about one minute, then add the remaining ingredients. Whisk until all ingredients are mixed well together and then poor on top evenly. 

  7. Place in freezer for 2 hours. You can then take it out of the bread pan and remove the parchment paper. Cut into how many pieces you’d like!

  8. Keep these in the freezer but prior to eating let them defrost for about 5-10 minutes or so in the fridge. Eat and enjoy!
