Let's turn up the BEET with this too beautiful to eat hummus! One of my all time favorite snacks. It is such a refreshing, light and healthy dip that is perfect for summer. Not to mention It's vibrant color makes you feel all sorts of jazzy while eating it too ;) Packed with protein from the chickpeas and lots of vitamins and minerals from the beets. Beets are high in immune-boosting vitamin C, fiber and essential minerals like potassium and manganese. 



roasted Beet hummus:

  • 2 medium beets (you can either roast them yourself or buy them already cooked at the store)
  • 1 3/4 cups cooked chickpeas (or 1 can)
  • 1/2 tsp sea salt
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 2 tbsp fresh rosemary 


1. Add all of the ingredients to a high speed blender and blend until smooth, easy peasy!
